Introduction

The traditional method of making paneer block requires more manual effort for pressing. It is also complicated to determine required pressure to remove water content. Paneer pressing machine is designed in order to facilitate the dairy farmers , paneer producers and domestic users to reduce manual efforts . It is easy to handle and portable.

Objectives :

1)Low cost Press mechanism to make block of 1 kg paneer.

Understanding Paneer Making Process :

Trial 1 : ( 2nd Aug 2021 ) with Mr. Bhanudas.D (Food lab)

Milk Quantity : 3 Lit., 6PH heating up to 85 degree Celsius for 25min.

Weight of Whey Paneer before pressing : 331 gm

Pressure applied to press Whey Paneer : 0.28 kg/cm2 for 30min but result was not desired

Then Pressure increased up to 0.58 kg/cm2 for more 10 min. give good result.

Weight of Paneer after pressing : 270gm of dimension 14cm*11cm*2.3 cm

Trial 2 ( 3rd Aug 2021) with Mr. Bhanudas D (Food Lab)

Milk Quantity : 4 Lit. PH 6 Heated up to 97 degree Celsius for 35min.

Weight of Whey Paneer before pressing : 370 gm

Pressure applied to press Whey Paneer : 0.59 kg/cm2 for 18 min

Weight of Paneer after pressing : 339 gm of dimension 14cm*12cm*3 cm

LOD CALCULATION :

Before press : 1) Sample Taken = 9.52 gm

2) Weight after drying= 7.11 gm

LOD = 9.52 – 7.11 = 2.41 gm

After press : 1) Sample taken = 7.8 gm

2) Weight after drying = 6.94 gm

LOD = 7.8 – 6.94 = 0.86 gm
