This process is labor-intensive and time-consuming.

  1. Cleaning and Sorting

Take the required quantity of chana dal.

Remove dust, stones, damaged grains, and other foreign materials.

  1. Washing

Wash the cleaned chana dal thoroughly with potable water.

  1. Cooking

Cook the washed chana dal in a pressure cooker for 5–6 whistles until it becomes soft.

  1. Mashing

Drain excess water, if any.

Mash the cooked chana dal to obtain a smooth, lump-free consistency.

  1. Mixing

Add jaggery and sugar to the mashed chana dal.

Mix thoroughly until the sweeteners are uniformly incorporated.

  1. Cooking

Cook the mixture on a low flame for a few minutes with continuous stirring until it thickens.

Dry the trays in a cabinet tray dryer at 55°C for 9 hours or until the product reaches the desired moisture content.

Grind the dried flakes into a fine powder.

  1. Sieving

Pass the powder through a 60-mesh sieve to obtain a uniform particle size.

  1. Packaging

Pack the instant puran premix in airtight, moisture-proof laminated pouches and seal properly.
