Introduction-

Instant Prasad SHIRA PREMIX is a convenient, ready-to-cook mixture created for preparing the traditional Indian Sweet. Mainly premixes are shortcuts which saves our time & efforts in kitchen by eliminating the need to measure & combining process of various ingredients while cooking that particular dish

Background-

“SATYANARAYAN PRASAD SHIRA” also known as Sheera or Suji Halwa which is commonly offered as prasad during various religious ceremonies & poojas. This is an Indian sweet dish that holds a sacred significance during the Satyanarayan Pooja, a popular Hindu Religious ritual. The traditional offering involves Semolina, ghee, milk, sugar & sometimes bananas, dry fruits & cardamom.

Need of project-

The need for Satyanarayan Prasad premix arises from the growing demand for convenience, hygiene & consistent quality in preparing Prasad for religious ceremonies, particularly Satyanarayan pooja. In today’s fast-paced lifestyle, many families & devotees seek simple & reliable solutions that allow them to perform rituals without the hassle of making Prasad from scratch. An instant premix ensures that traditional custom are maintained, even for those lacking time, culinary skills or access to all ingredients, while also reducing preparation errors 7 promoting food

Objectives- 

1.To develop a convenient, ready-to-cook premix. 

2.To ensure consistent quality, taste & hygiene.                                                                                                        

3.To make traditional Prasad preparation accessible.                                                                                          

 4.To provide a shelf-stable product.                                                                                                                                  

  5.To achieve the authentic taste as fresh Prasad.

Discussion with Dixit sir about prasadacha shira & its premix.

1st trial:

Material required:

samolina ( sooji)= 150 gm

Banana= 1 half

Ghee= 150 ml

Milk= 500 ml

PROCEDURE:

Take 40 ml ghee in a pan add 150 gm samolina in it , dry roast it up to pinkish brown colour add 1 half chopped banana between the roasting. After completing the roasting add the pre boiled milk (500 ml) in it & stir it well.

Milk will get soaked in samolina then turn off the flame.

Make a weight of cooked mixture.

WAC=810 gm

wt putted for drying = 560 gm

4 SEPT 2025

wt after drying = 180 gm

LOD=560-180/560 X100= 67 %

Rehydration trial on premix.

50 gm premix+40 gm ghee+50 gm sugar in 200 ml boiling water.

cooked for 10 mins.

REHYDRATION TRIAL

20 gm premix + 15 gm sugar in 50 ml boiling water.

RESULT= Taste like home made shira but not like prasad shira. Cooked properly.

Dehydration trial.

MATERIAL:

  1. Samolina= 400 gm
  2. milk= 1200 ml

Weighed 400 gm samolina & roasted it without ghee up to pink brown colour.

Boiled the milk in another vessel & then added in roasted samolina, mixed it well & put a cap on it turn off the flame.

Then greased the drying tray & spread the cooked mixture on it.

wt putted for drying=990 gm

Temperature of dryer= 55^0 celcious

10 SEPT 2025

Removed dried mixture from dryer 7 weighed it.

WAD=352 gm

LOD= 990-352/990 X 100=64.44 %

Rehydration trial.(Banana added premix)

20 gm premix in 75 ml boiling water + 15 gm sugar after rehydration.

Result= Rehydrated properly , but sugar not get dissolved properly due to added after process.

IMPRESSION:

After rehydration trial premix showing stickiness; Due to addition of banana before drying process

REHYDRATION TRIAL

50 gm ghee boiled & after 10 min of cooling added in 76 gm dried premix of Shira.

Then added in 150 ml boiling water.

IMPRESSION:

Ghee is not absorbed well, lumps are not rehydrating well & remains after rehydration.

Discussed with Dixit Sir about problem that is ghee is not soaking properly while rehydration.

CONCLUSION: Stopped the project because, results are not satisfactory (problem- ghee is not soaking properly.)
