Introduction

Hi everyone! I’m excited to share my journey of working on an Instant Gajar Halwa Premix at Vigyan Ashram, Pabal. Under the guidance of Dixit Sir and Reshma mam, I have been developing a convenient and tasty way to enjoy Gajar Halwa without the long preparation time.

What is Instant Gajar Halwa Premix?
The Instant Gajar Halwa Premix is a ready-to-use mix that makes it super easy to prepare delicious Gajar Halwa in minutes. Just add milk or, heat it up, and enjoy! The goal is to make this beloved dessert more accessible while keeping its authentic taste intact.

Why it is Important ?
1. Convenience: No more long hours of grating carrots and slow cooking.
2. Long Shelf Life: It stays fresh for a long time without preservatives.
3. Nutritional Value: Maintains the goodness of carrots, milk solids, and dry fruits.
4. Market Demand: Instant and ready-to-eat foods are becoming increasingly popular, making this a promising idea.


Process & Challenges

Creating this premix wasn’t as easy as I first thought! Here’s what went into it:

1. Ingredient Selection: Finding the best quality carrots, milk solids, sugar, and ghee.
2. Drying & Processing: Testing different methods to dry the carrots while keeping their colour and nutrients.
3. Taste & Texture Optimization: Balancing the flavours to get that rich, authentic taste.
4. Shelf-Life Testing: Making sure the product stays fresh for a long time.


Future Scope
I believe this premix has great potential beyond just personal use. It could be sold in:

1. Ready-to-eat food segments.
2. Grocery stores and online marketplaces.
3. Export markets for Indian sweets.


There’s still room for improvement – I’d love to explore different flavours, a sugar-free version, and better packaging for extended shelf life.

Conclusion
Working on this project has been an exciting journey full of learning and innovation. It feels amazing to combine tradition with convenience, making Gajar Halwa more accessible in today’s fast-paced world. I’m looking forward to refining this product further and seeing where it goes!

Without Sugar Gajar Halwa Premix

Ingredients :-

  • carrot-9 kg
  • waste- 2068 gm
  • milk- 6.932 lit
  • ghee- 25 gm
  • Dry fruits- 25 gm
  • Cardamon :- 20 gm

Procedure :-

I take 9 kg Orange Carrots

Wash all the carrots with water

Grating (0.4cm) (waste 2068 gm) ( carrot is around 6932 gm from 9 kg carrot )

I take around 6.932 gm carrot for final process

I Boil Milk (1:1 ratio) reduced milk by boilling 50 %

Greated gajar boill with milk ( 1 hrs)

I add ghee (25gm) and Cardamon(20gm) in boil milk

Placed electric dryer for 9hrs at 55°C

and all dough is seperate each other

After that Placed into electric dryer 6hrs for final drying

Ready the mix instant Gajar ka Halwa (1800 gm )

Packaging :-

The Instant Gajar Halwa Premix is packed in a Tetra Pack to ensure product safety, convenience, and extended shelf life. The package is designed to protect the premix from moisture, air, and light while making it easy for consumers to prepare a fresh serving of Gajar Halwa at home.

Pack Composition
Each Tetra Pack contains:
Instant Gajar Halwa Premix Powder: 94 g
Dry Fruits: 6 g
Cashew (Kaju): 3 g
Almond (Badam): 3 g
Total Net Weight: 100 g

CONCLUSION :-

The Instant Gajar Halwa Premix project was successfully completed through carrot processing, cooking with milk, dehydration, drying, and powder preparation. From 9 kg of fresh carrots, 1800 g of final Instant Gajar Halwa Premix was obtained. The developed premix was successfully packed in 100 g packs with dry fruits and prepared for consumer use.

The product was also introduced for selling and received a good response from customers, resulting in considerable sales. This project demonstrated the practical feasibility of converting fresh carrots into a convenient, value-added instant product. Overall, the project was successfully completed from product development and processing to packaging and actual market selling.
